Chocholá, a nowhere town 45 minutes from Yucatán’s capital, Mérida, seems an odd place for a set-the-bar hotel. Until you see Chablé, a renovated 19th-century hacienda nestled into Mexico’s Mayan forest. It’s a step back in time, but inside all is modern and arty: a cool, quiet library, a gleaming bar with edgy Day of the Dead skull artworks. The resort features Mayan architecture, and its casitas are artfully folded into the lush jungle and surrounded by nature. Original 19th-century walls from a working hacienda frame each one-bedroom casita which boasts 1,700 square feet, a specious bathroom, private pool and outdoor shower. For those desiring more space, there are two large villas. The resort features experts in a variety of modalities that range from Mayan healing to traditional yoga to ensure your every need is met. Additional activities include gardening in the Mayan garden with Chable’s resident horticulturist, bicycling the resorts’ many trails and cooking lessons in Mayan cooking techniques. You can also enjoy the spa which is set right on a mysterious natural cenote (freshwater pool). There is no better place to unwind with a drink than one of the hotel’s bars, which include 2 bars/lounges and a poolside bar. The food in the three restaurants is extraordinary, especially in glassy Ixi’im – do NOT miss the chocolate cassoulet.
